 How to Make Pull Me Up Ice Cream Cake Quickly at Home






Ingredients:


Prepare the cake:


Eggs 4 (room temperature)

¾ cup powdered sugar

½ cup cooking oil

Vanilla essence 1 & ½ teaspoon

½ cup milk (room temperature)

1 & ½ cup all purpose flour

cocoa powder 1/3 cup

baking powder 1 teaspoon

baking powder 2 teaspoons

Instant coffee 1 teaspoon

salt ½ tsp


Prepare the ice cream layer:


Hico Dairy Vanilla Ice Cream

Hico Dairy Chocolate Ice Cream


Prepare the chocolate ganache:


Chopped dark chocolate 300g

Cream 200ml

whipped cream

chopped peanuts


Directions:

Prepare the cake:


Put the eggs and powdered sugar in a bowl and beat well until fluffy.

Add cooking oil, vanilla essence, milk and beat well.

Place the colander in a bowl, add the all-purpose flour, cocoa powder, baking soda, baking soda, instant coffee, and salt, and sift all the dry ingredients together, then beat until just combined. they are well mixed.

Pour the prepared batter into an 8-inch round pan (greased with oil and lined with parchment paper) and pat a few times.

Bake in a preheated oven at 180°C for 35 minutes or until the skewer comes out clean.

Take out of the oven and let cool down.


Prepare the ice cream layer:


Properly line an 8-inch round pan with foil.

Use an ice cream scoop to place the vanilla ice cream and chocolate ice cream into a lined cake pan, then press into a flat layer, cover the surface with cling film and freeze for 4-6 hours.


Prepare the chocolate ganache:


In a pitcher, add the dark chocolate, heavy cream and microwave for 1 minute and 30 seconds, then stir well and strain into a squeeze bottle.

Using the cookie cutter, cut horizontally three layers of cake.

Line an 8-inch round pan with cling film, cover with a layer of cake and drizzle with chocolate ganache.

Remove the cling film from the ice cream layer and invert the ice cream layer over the cake layer, add the chocolate ganache and place another cake layer on top, cover with cling film and freeze for 4-6 hours.

Take the cake out of the freezer, remove the cling film and spread the whipped cream on top of the cake.

Take a piece of plastic wrap and create a border/wall around the cake and seal the edges with masking tape.

Pour the remaining slightly warm ganache over the cake inside the mold and add the peanuts.

Pull the leaf, slice and serve!
