When used as a pizza topping, pepperoni is usually sliced thinly and placed on top of the pizza before baking. The heat from the oven causes the pepperoni to release its oils and crisp up around the edges, adding a delicious flavor and texture to the pizza.

Recipe of Pepperoni:

Ingredients:

  • 1 pound ground beef
  • 1 pound ground pork
  • 2 teaspoons paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon fennel seeds
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup water
  • 2 tablespoons curing salt (also known as Prague powder #2)

Instructions:

  1. In a large bowl, combine the ground beef and ground pork.

  2. Add the paprika, garlic powder, onion powder, salt, black pepper, fennel seeds, cayenne pepper, and red pepper flakes. Mix well to combine.

  3. Add the water and curing salt to the meat mixture and stir until everything is evenly distributed.

  4. Cover the bowl with plastic wrap and refrigerate for 24 hours to allow the flavors to meld.

  5. After 24 hours, preheat your oven to 200°F.

  6. Shape the meat mixture into a log shape and wrap it tightly in cheesecloth.

  7. Place the wrapped pepperoni on a baking sheet and bake in the oven for 6-8 hours, or until the internal temperature reaches 160°F.

  8. Remove the pepperoni from the oven and let it cool to room temperature.

  9. Once cooled, remove the cheesecloth and slice the pepperoni thinly.

Your homemade pepperoni is now ready to use as a pizza topping or enjoy as a snack! Store any leftover pepperoni in an airtight container in the refrigerator for up to two weeks.
