Preparation for Chicken Tortilla Soup Ingredients are:
2 tablespoons of olive oil
1 medium white onion, diced
1 medium red pepper, diced
5 cloves of garlic, chopped
2 teaspoons of chili powder
1 teaspoon of ground cumin
1 teaspoon paprika
4 cups of chicken broth
3 skinless and boneless chicken breasts
15 ounce can of tomato sauce (Pasatta)
15 ounces can fire toasted diced tomatoes
15 ounce can of black beans
7 ounce can of diced green chilies
1 1/2 cups frozen corn (or use canned)
1/2 teaspoon of salt
1/2 cup freshly chopped coriander
1/4 cup lime juice
To Serve:
3 cups of tortilla strips or tortilla chips
2 medium-sized avocados, diced
1 cup of grated Monterey Jack cheese
1/4 cup sour cream

Heat the olive oil in a large saucepan over medium heat. Add onion and paprika and sauté for 5 minutes. Add the garlic, chilli powder, cumin and paprika and roast for 60 seconds.
Pour the chicken stock, add the chicken breast and bring to the boil. Reduce the heat to medium and simmer until the chicken is cooked through, about 15 to 20 minutes.
Remove cooked chicken from the soup, chop up with a fork and return to the saucepan.
Pour in tomato sauce, diced tomatoes, black beans, green chilies, and corn. Bring the soup to a simmer again and simmer for 5 minutes.
Turn off the stove and stir in the coriander and lime juice. Season with salt, season to taste. Serve hot, topped with tortilla strips, diced avocado, cheese and sour cream.
