How to Prepare Various Bubble Boba Tea/Tapioca Pearls
Ingredients:
Tapioca Starch Boba Pearls:
1. Brown sugar ¼ cup
½ cup of water
3/4 cup tapioca starch
cocoa powder 2 tbsp
Water 4-5 tablespoons or as needed
water as needed

2. Cornmeal Boba Beads:
Brown sugar ¼ cup
1/3 cup water
Cornstarch ¾ cup
cocoa powder 2 tbsp
Water 4-5 tablespoons or as needed

3. Milk syrup/cream:
Milk 2.5 cups
condensed milk 1 cup
½ cup cream
Mocha Bubble Tea:
Hot water 1 cup
Instant coffee ½ tbsp
ice cubes
whipped cream
cocoa powder
4. Boba Milk Tea:
2 tea bags
Hot water 1 cup
ice cubes
whipped cream
Brown sugar
5. Chocolate Bubble Tea:
chocolate syrup
ice cubes
Directions:
1. Boba Pearls With Tapioca Starch:
In a saucepan add the brown sugar and water and cook until the sugar has dissolved.
Turn off the heat, add 2-3 tablespoons of tapioca starch and stir until well combined (make sure there are no lumps), then turn on the heat and cook over low heat 1 -For 2 minutes or until thickened.
Turn off the heat, add the remaining tapioca starch and cocoa powder and mix well.
Transfer the mixture to a clean work surface and mix together.
Gradually add water (1 tablespoon at a time) and knead until a dough forms.
Sprinkle with tapioca starch and roll out the dough with your hands.
Cut into portions and roll out each portion into long, stick-like pieces and repeat with the rest of the dough.
Cut the buns into small pieces and roll each into a small ball (the size of a pea).
In a kettle add water and bring to a boil.
Add the prepared tapioca pearls and cook over medium-high heat for 20 minutes (stir gently so they don't stick to the bottom), then turn off the flame, cover and let stand 15 minutes, drain and wash thoroughly with water.
In a pan add the brown sugar and mix well over low heat.
Add the prepared tapioca pearls and mix well until the sugar melts and the pearls caramelize with the sugar and remove to a glass (makes 3-4 servings).
2. Cornmeal Boba Beads:
In a saucepan add the brown sugar and water and cook until the sugar has dissolved.
Turn off the heat, add 2-3 Tbsp cornstarch and stir until smooth (make sure there are no lumps), then turn on the heat and let soften for 1-2 minutes simmer or until thickened.
Turn off the heat, add the remaining cornstarch and cocoa powder and mix well.
Transfer the mixture to a clean work surface and mix together.
Gradually add water (1 tablespoon at a time) and knead until a dough forms.
Cut into portions and roll out each portion into long, stick-like pieces and repeat with the rest of the dough.

Sprinkle with cornstarch and brush well to prevent sticking.
In a kettle add water and bring to a boil.
Add the prepared boba pearls and cook over medium-high heat for 20 minutes (stir gently so they don't stick to the bottom), then turn off the flame, cover and leave for 15 minutes, drain and wash thoroughly with salted water.
In a pan add the brown sugar and mix well over low heat.
Add the prepared boba pearls and mix well until the sugar melts and the pearls caramelize with the sugar and remove to a glass (makes 3-4 servings).
Put the milk, cream, condensed milk in a jug and whisk well. The milk and cream syrup is ready!
3. Mocha Bubble Tea:
Pour the instant coffee into the hot water and mix well. The black coffee is ready.
In a serving or mason jar, add ice cubes, brewed boba pearls with syrup, brewed black coffee, brewed milk syrup and top with whipped cream, dust with cocoa powder and serve!
4. Boba Milk Tea:
Place tea bags and hot water in a cup, cover and let steep for 2 minutes, then remove tea bags. The black tea is ready!
In a serving or mason jar, add ice cubes, prepared boba pearls with syrup, prepared black tea, prepared milk syrup, and heavy cream, sprinkle with brown sugar and torch and serve!
5. Chocolate Bubble Tea:
In a serving or mason jar, add prepared boba pearls with syrup and roll the jar to coat the sides with melted sugar, add chocolate syrup.
