How to make Fruitcake in an Air Fryer at Home
Ingredients:
Tutti frutti green 2 tablespoons
Tutti frutti yellow 2 tablespoons
Tutti frutti red 2 tablespoons
Chopped almonds 2 tbsp
Blackcurrant 2 tbsp
All purpose flour 1 tbsp
150g unsalted butter (room temperature)
½ cup powdered sugar
Eggs 2 (room temperature)
1 cup all purpose flour
salt ¼ teaspoon
baking powder 1 teaspoon
vanilla essence 1 teaspoon
Mixed Tutti Frutti
Dried blackcurrant
chopped almonds
Method of Preparation:
In a bowl, add the green, yellow and red tutti frutti, the almonds, the blackcurrant, the all-purpose flour, brush well and set aside.
In a bowl, add the butter and beat until it changes color.
Add powdered sugar and beat until just combined.
Add the eggs one at a time, beating after each out.
Place the sieve into a bowl, add the all-purpose flour, salt and baking powder, sift together the dry ingredients and beat until well combined.
Add the vanilla essence and beat well.
Now add the flour-coated fruit and nut mixture and gently fold in with the spatula.
Grease a 3.5 x 7 inch foil cake pan with butter and line with parchment paper.
Pour the batter and spread evenly.
Add the tutti frutti mixture, blackcurrant, almonds and beat a few times.
Air fry at 150°C for 25 to 30 minutes or until the skewer comes out clean.
Slice and serve!
