 How to Make Fajita Skewers with Corn Feta Salad at Home Quickly




Ingredients:


Prepare Fajita Seasoning:


Red Chili Powder 1 & ½ tsp. tea or to taste

Salt 1 tsp or to taste

paprika powder 1 & ½ tsp

Cumin powder 1 & ½ teaspoon

powdered sugar ½ teaspoon

garlic powder 1 & ½ tsp

½ tsp black pepper powder

Onion powder ½ tsp

Dried oregano 1 teaspoon


Prepare the fajita skewers:


Boneless chicken cubes 500 g (1 inch cubes)

lemon juice 2 & ½ tbsp

onion cubes

Pitted and diced tomato

diced peppers

yellow pepper cubes

2 tbsp cooking oil


To prepare the corn and feta salad:


1 cup cooked corn kernels

1 cup cucumber

½ cup chopped onion

¼ cup chopped pickled jalapenos

Chopped fresh parsley 2-3 tbsp

½ cup feta cheese cubes

Garlic chopped ½ tbsp

¼ teaspoon black pepper powder

Salt to taste

lemon juice 1-2 tbsp

Extra virgin olive oil 2 tbsp


Preparation : 


Prepare Fajita Seasoning:


In a bowl, add red chili powder, salt, paprika powder, cumin powder, powdered sugar, garlic powder, black pepper powder, onion powder, dried oregano and mix well. The fajita seasoning is ready!


Prepare the fajita skewers:


In a bowl, add the chicken, prepared fajita seasoning, and lemon juice and mix well, cover and marinate for 30 minutes.

Thread onion, marinated chicken, tomato, bell pepper, marinated chicken, yellow bell pepper, tomato, marinated chicken, bell pepper and onion onto skewers (makes 14-15 skewers).

Heat a cast-iron grill pan, grease with cooking oil and grill the skewers on all sides over medium-high heat until cooked, brushing with cooking oil occasionally.


To prepare the corn and feta salad:


In a bowl, add corn, cucumber, onion, pickled jalapenos, fresh parsley, feta cheese and mix well.

Place the garlic, black pepper powder, salt, lemon juice, and olive oil in a small bowl and whisk well.

Pour the prepared vinaigrette into a salad bowl and mix well.

Serve the fajita skewers with a corn and feta salad
