How to Prepared a Turkish Breakfast Menemen at home
Ingredients:
Large Green Chili 1
1 tbsp cooking oil
butter 2-3 tablespoons
Chopped onion 1 medium
1 cup tomato passata
Salt ½ tsp or to taste
Crushed red bell pepper ¼ teaspoon
paprika powder ¼ teaspoon
¼ teaspoon black pepper powder
Sliced chicken sausage 1
Shredded cheddar cheese 3 tbsp
grated mozzarella cheese 3 tbsp
eggs 2
Grated mozzarella cheese 4 tbsp or as needed
Chopped fresh coriander
Directions:
Deseed and chop the green chilli and set aside.
In a small wok add cooking oil and butter and let melt.
Add onion and sauté until translucent.
Add the chopped green chilli, mix well and cook for a minute.
Add the tomato puree, mix well and cook over low heat for 3-4 minutes.
Add salt, crushed red pepper, paprika powder, black pepper powder, mix well and cook over low heat for a minute.
Add the chicken sausage and mix well.
Add the cheddar cheese and mix well.
Add the mozzarella cheese and mix well.
Add the eggs and mix gently.
Add mozzarella cheese and fresh cilantro, cover and cook over low heat until cheese melts (3-4 minutes).
Serve with French bread!
