 How to Make a three layer Chocolate Fudge Cake at Home




Ingredients:


Prepare the chocolate cake:


All Purpose Flour 210g (1 & ½ cup)

Cocoa powder 56 g (1/2 cup + 2 tbsp)

salt ¼ teaspoon

baking powder ½ tsp

baking powder 1 teaspoon

Eggs 2 (room temperature)


Pakola whole milk 1 cup


½ cup cooking oil

powdered sugar 1 & ½ cup


Prepare the chocolate ganache and icing:


whipped cream 200ml

Pakola whole milk ¼ cup

Grated milk chocolate 350g

Makhan (butter) unsalted 60g (room temperature)

¾ cup powdered sugar

chocolate chips


Directions:


Prepare the chocolate cake:


Grease an 8 inch baking dish with cooking oil, line with parchment paper and set aside.

Place a sieve in a bowl, add the all purpose flour, cocoa powder, salt, baking soda, baking powder and sift together the dry ingredients, mix well and set aside.

Place the eggs, milk, cooking oil, powdered sugar in a bowl and beat well.

Now add the dry ingredients and beat on low speed until combined, then fold in with a spatula.

Pour the batter into the prepared pan and bake in the preheated oven at 180°C (on the bottom rack) for 40 minutes.

Remove from oven, immediately drizzle with water to keep cake moist.

Remove cake from pan and set aside on wire rack to cool completely.


Prepare the chocolate ganache and icing:


Put the heavy cream and milk in a saucepan, turn on the heat, mix well and simmer over low heat (6-8 minutes).

Remove from the heat, add the chocolate and mix well until the chocolate melts.

Add the butter and mix well until well combined.

Transfer to a bowl and let cool completely while stirring at room temperature.

Reserve 1 & ½ cups of ganache for later use.

Cover the rest of the ganache and refrigerate until chilled.

Remove from refrigerator and beat well for 3-4 minutes.

Add the powdered sugar, beat until soft peaks form and pour into a piping bag.

Using the cookie cutter, cut horizontally three layers of cake.

Place the first layer of cake on the cake stand, apply the prepared chocolate frosting and add chocolate chips.

Put another layer of cake on top, apply the prepared frosting and add chocolate chips. Repeat the same process for the top layer of the cake and cover the sides of the cake with frosting and refrigerate for 1 hour.

Pour the reserved chocolate ganache while hot on top of the cake, apply the grated chocolate to the sides of the cake and place in the refrigerator for 30 minutes.


Decorate & serve!
