How to Make Tarragon Chicken Pasta at Home
Ingredients:
Prepare the tarragon chicken:
Dried oregano 1 teaspoon
Cracked black pepper 1 teaspoon
Roasted and crushed cumin seeds 1 teaspoon
Dried tarragon leaves ½ tsp
Salt ½ tsp or to taste
Garlic crushed 1 teaspoon
lemon juice 2 tbsp
Worcestershire sauce 1 tbsp
olive oil 2 tbsp
Boneless chicken fillet 250g
Prepare the tarragon pasta:
olive oil 2 tbsp
butter 1-2 tablespoons
Chopped onion 1 small
minced garlic 1 tbsp
1 cup chicken broth Substitute: 1 chicken cube dissolved in 1 cup lukewarm water
1 cup cream
Cracked black pepper 1 teaspoon
Dried tarragon leaves 1 teaspoon
Salt ½ tsp or to taste
Grated parmesan cheese 3-4 tbsp
Penne pasta cooked according to packet instructions 200g
Chopped fresh parsley
Directions:
Prepare the tarragon chicken:
In a bowl, add the dried oregano, crushed black pepper, cumin, tarragon leaves, salt, garlic, lemon juice, Worcestershire sauce, olive oil, mix well and Reserve.
Place the chicken breast on a clean cutting board and cut it in half, starting in the middle.
Cover with cling film and gently pound the fillets with a meat mallet.
Place the chicken fillets in the marinade, cover with cling film and leave to marinate for 30 minutes.
Grease the grill pan with olive oil, place the marinated fillets with the marinade and finish cooking over low heat (7-8 minutes on each side).
Slice the chicken and set aside.
Prepare the tarragon pasta:
Put olive oil and butter in a wok and let melt.
Add the onion and garlic mix well and add chicken broth
Turn off the heat, add the cream and whisk well.
Turn on the heat, add the cracked black pepper, tarragon leaves, salt and parmesan and mix well for one minute.
Add the cooked pasta and mix well.
In a serving bowl, add the tarragon pasta, tarragon chicken, garnish with fresh parsley and serve!
