How to Cook Restaurant Style Singaporean Rice at Home
Ingredients:
Prepare the chicken:
yogurt 3 tablespoons
Red chilli powder 1 teaspoon
Cumin powder ½ tsp
coriander powder 1 teaspoon
paprika powder 1 teaspoon
Turmeric powder ½ tsp
Salt 1 tsp or to taste
Tikka masala 1 tbsp
1 & ½ tbsp mustard paste
Ginger Garlic Paste 1 tbsp
lemon juice 2 tbsp
Boneless Chicken Cubes 600g
½ cup cooking oil
Chopped garlic 5-6 tbsp
Chopped Green Chilies 4-5 tbsp
Sauce:
½ cup mayonnaise
1/3 cup tomato ketchup
Hot sauce 1 & ½ tbsp
Mustard paste 2 tbsp
¼ teaspoon black pepper powder
Pinch of salt or to taste
Red Chili Powder ¼ tsp
garlic oil reserved 4 tbsp
Chopped ginger 1 tbsp
1 cup sliced carrots
1 cup diced peppers
Diced cabbage 1 and ½ cups
½ cup diced white onion
Chopped green onion leaves 3-4 tbsp
soy sauce 1 tbsp
charcoal for smoking
Assembly :
Saddle rice cooked with salt 400g
sauce prepared
Chicken prepared with vegetables
250g spaghetti, cooked according to package directions
Fried garlic and green peppers
Sauce prepared
Directions:
Prepare the chicken:
Combine yogurt, red chili powder, cumin powder, coriander powder, paprika powder, turmeric powder, salt, tikka masala, mustard paste, ginger-garlic, lemon juice in a bowl and mix well.
Add the boneless chicken, mix well, cover and let marinate for 15 minutes, then set aside.
In a saucepan add the cooking oil and heat.
Add the garlic, mix well and sauté for 30 seconds.
Add the green chillies, mix well and fry until golden brown.
Place a colander in a bowl and sift the fried garlic and green chiles, then set aside. Save the garlic oil for later use.
Prepare sauce:
In a jug, combine mayonnaise, ketchup, hot sauce, mustard paste, black pepper powder, salt, red pepper powder and mix well. Pour into a squeeze bottle and set aside.
In a wok, add the reserved garlic oil and ginger, mix well and sauté until lightly browned.
Add the marinated chicken, mix well and cook over medium heat until tender (about 15-18 minutes).
Add carrots, peppers, cabbage, white onion and mix well.
Add the green chives and mix well.
Add the soy sauce, mix well and cook for a minute.
Now turn off the flame and give charcoal smoke for 2-3 minutes, then set aside.
Assembly :
Place the cooked rice in a serving bowl and drizzle over the prepared sauce. Prepared chicken with veggies, cooked spaghetti, fried garlic and green chiles, prepared sauce, garnish with scallions and serve!
