Ingredients:


Prepare the dough:

Cup of warm milk

Sugar 2 tsp

Instant yeast 2 tsp

sifted all-purpose flour 3 cups

Salt 1 tsp

Cooking oil 2 tbsp

½ cup warm water or as required

Cooking oil 1 tsp


Prepare the spinach walnut filling:


Chopped spinach ½ kg

Salt 1 tsp

Cooking oil 2-3 tbsp

1 cup chopped onion

1 tbsp chopped garlic

Salt ¼ teaspoon or to taste

Black pepper powder 1 tsp

Sumac powder 2 tbsp

1/3 cup chopped walnuts

Paprika powder 1 tsp

Lemon juice 1 tbsp

Feta cheese


Indications:


Prepare the dough:


Pour milk, sugar and instant yeast into a small jug and mix well, cover and let rest for 5 minutes to activate the yeast.

Put all-purpose flour in a bowl, season with salt and mix well.

Add the cooking oil and mix well until it crumbles.

Add the yeast mixture and mix well.

Gradually add the water and knead until the dough is formed.

- Grease your hands with cooking oil and knead the dough again, cover and let rise for 1 ½ hours (warm place).


Prepare the spinach walnut filling:


Put the spinach in a bowl, season with salt and mix well, cover and let rest for 10 minutes.

Place a muslin cloth in a bowl, add the spinach, squeeze it well to remove excess water, and set aside.

Add cooking oil and onion in a wok and sauté until translucent.

Add the garlic, mix well and cook for a minute.

Add the spinach and mix well.

Add salt, black pepper powder, sumac powder, walnuts, paprika powder, lemon juice, mix well and cook for 1-2 minutes.

Let it cool down.

Dust with dry flour and knead again until smooth.

Divide the dough into two equal parts, take one part and knead again until a homogeneous dough is formed.

Dust with dry flour and roll out with the help of a rolling pin and cut into a round shape with the help of the dough cutter (4.5 inch round cutter).

Put 1 tablespoon of the spinach and walnut filling on a small rolled-out dough, add the feta cheese and wet the edges.

Place the Lebanese spinach patties on the baking sheet lined with butter paper and bake in the preheated oven at 220 ° C for 12-14 minutes.
