Ingredients:


2 medium carrots

Cabbage half

Sweet corn 1 medium

2-inch piece of ginger

Chives 2 stems

1 large onion

Mushrooms 5-6

Boiling water 2 and ½ liters

Peeled garlic 2 cloves

Bay leaves 2

Salt as per tast

2 tablespoons cooking oil

1 ½ tsp ginger garlic paste

1 teaspoon salt or to taste

1 tablespoon vinegar

1 ½ tablespoon soy sauce


Indications:


Note: All vegetables must be washed well before cutting.


Peel the carrots, cut off the tip and stem and collect them on a plate.

Now cut the carrots into slices and save them for later use.

Remove a layer of cabbage, cut the stem part and collect it on a plate.

Now chop the cabbage and save it for later use.

Peel the sweet corn and collect the hairs on the plate.

Remove the corn kernels and save for later use and collect the remaining corn kernel on the plate.

Cut the ginger with its skin and place it on the plate.

Cut the roots and tail parts of the chive leaves and collect them on a plate.

Now chop the chive leaves and save them for later use.

Cut the white part of the spring onion and collect it on the plate.

Cut the onion in half, remove the head part and collect it on a plate.

Remove the skin from the onion and collect the first layer of onion on the plate (reserve for the vegetable broth).

Now chop the onion and save it for later use.

Cut the mushrooms into slices and reserve for the soup.

In boiling water add all the vegetable peels from the dish, the garlic, the bay leaf, the cloves, the salt, the whole black pepper (crush with the help of a crusher) and mix well, bring to a boil, cover and cook over a fire. slow. for 15-20 minutes.

Now filter the broth with the help of a strainer, discard the residues. Homemade Vegetable Broth  is ready and save for later use.

In a saucepan, add the cooking oil, save all the chopped vegetables, mix well and sauté for 1-2 minutes.

Add the ginger garlic paste and mix well for 1-2 minutes.

Add the perapaed vegetable broth, mix well and bring to a boil.

Add salt, vinegar, soy sauce and mix well, cover and simmer for 10-15 minutes.
