How to make Turkish Mezze Platter at Home
Ingredients:
Prepare Kafta:
1 small onion
1 diced pepper
1 cup of fresh parsley
½ tablespoon of minced garlic
Chop ½ kg (with 10% fat)
1 teaspoon of salt or to taste
1 teaspoon of ground cumin
Black pepper powder 1 tsp.
1 tsp ground coriander
2 teaspoons of powdered sumac
Seven spices 1 tsp
2 tablespoons of cooking oil
Prepare the Hummus:
2 1/2 cups of boiled chickpeas
Sliced garlic 3-4 cloves
Tahina 5-6 tbsp
Salt ¼ teaspoon or to taste
½ teaspoon of ground cumin
2 tablespoons of olive oil
2-3 tablespoons of lemon juice
Crushed ice 2-3 cubes
Olive oil
Sumac powder
Prepare the quick card:
cucumber, peeled and diced 1 cup
1 cup diced tomatoes
½ cup diced pickled cucumber
½ tablespoon of minced garlic
½ cup of chopped fresh parsley
½ cup of chopped mint leaves
Salt to taste
Ground black pepper to taste
1 tablespoon of lemon juice
2 tablespoons of olive oil
¼ cup of feta cheese cubes
Prepare the tzatziki sauce:
1 cup hanging yogurt
Cucumber grated with the skin and squeezed 1 cup
1 tsp minced garlic.
2-3 tablespoons of chopped mint leaves
Salt ¼ teaspoon or to taste
1 tablespoon of lemon juice
2 tablespoons of olive oil
Assembly:
Cucumber
Black and green olives
Cherry tomatoes
Toasted pita bread
Pickled cucumber
Fresh parsley
Lemon slices

Preparation:
Prepare Kafta:
In a meat grinder, add the onion, pepper, fresh parsley, garlic and chop well.
Add the ground beef, salt, cumin powder, black pepper powder, coriander powder, sumac powder, seven spices and chop until well blended and refrigerate for 30 minutes.
Grease your hands with cooking oil, take a small amount of the meat mixture (40 g), form a smooth ball and roll it on wooden skewers (dose 16-18).
Heat a cast iron skillet, add cooking oil and cook the kafta over medium heat until cooked (8-10 minutes).
Prepare the Hummus:
In a food processor, add the boiled chickpeas, garlic, tahini, salt, cumin powder and mix well.
Add the olive oil, lemon juice, crushed ice and mix until well blended.
Drain on a plate, add the olive oil, sprinkle with sumac powder and set aside.
Prepare the quick card:
In a bowl, add the cucumber, tomatoes, pickled cucumber, garlic, fresh parsley, mint leaves, salt, ground black pepper, lemon juice, olive oil, mix and mix well.
Add the feta cheese, mix well and set aside.
Prepare the tzatziki sauce:
In a bowl combine the yogurt, cucumber, garlic, mint leaves, salt, lemon juice, olive oil and mix well.
Preparation:
