Ingredients:

1. Cooked rice: 1 cup (arborio rice or whatever we use for khichdi or kheer)

2. Yellow, red and green peppers: some of all colors (cut into small pieces)

3. Milk: 1 cup (full cream)

4. Mozzarella cheese: 1 cup (grated)

5. Corn flour: 2 tablespoons

6. Salt: to taste

7. Black pepper powder: ½ tablespoon

8. Oregano: ½ tablespoon

9. Chilli flakes: ½ tablespoon


Method:


Step 1: Prepare the Base

First bring the milk to the boil in a medium-sized saucepan and after boiling add the grated cheese and mix well. When the cheese is melted, add some black pepper powder, oregano, chilli flakes and salt and mix well. The risotto pasta is ready.


Step 2: Prepare the Risotto

Put some oil in a pan . Add the peppers and sauté them a little, then add the risotto pasta we cooked and stir everything well. Add black pepper powder, chilli flakes, salt and a little oregano and mix well.


Add the cooked rice and mix. Cook for 2 minutes and a delicious and healthy risotto is ready. Enjoy!


Note:

1. The risotto is made with arborio rice, but you can also use the local rice, but avoid the basmati style.

2. Do not cook the rice too long so that it mixes well with the spices.
