Measure 4 teaspoons of yeast in the same bowl as the flour.

4 may seem like a lot, but it's the secret to making the cutest, fluffiest pancakes.

Finally, add a pinch of salt to the dry ingredients.

You can also add sugar here if you'd like, around a tablespoon, but I prefer

Use a wooden spoon to mix the dry ingredients together until they are mixed.

Set the bowl aside.

Mix in the small bowl all wet ingredients

Break open a large free range chicken egg first, followed by the milk.

I use dairy products, but you can replace them with soy or almonds if you want.

Add 1/4 cup of cooled melted butter to the egg and milk.

Mix everything with a fork and make sure that the egg is well incorporated.

It's optional, but I like a hint of vanilla.

Add half a teaspoon of pure vanilla extract and mix again.

Make a well out of the flour and pour in the wet ingredients.

Fold the dough with a wooden spoon until there are no large lumps.

Make sure you don't mix too much as this will make your pancakes pretty chewy.

I kept these pancakes pretty sore, but add blueberries or chocolate if you want

Chips or some other flavor would be a good time now.

When you're ready to cook pancakes, heat a heavy-bottomed pan, such as cast iron, over medium heat.

low heat.

When the pan has heated up, add a small amount of butter to the pan to allow it to melt.

If you are not sure, lift the side with a spatula and check the underside.

Turn on the other side and fry for a few more minutes.

If your pancakes are browning a little quickly, adjust the heat.

Cooked Pancake on a plate and repeat.

You should get around 6-7 pancakes from this recipe, so keep going until you're out.

Insert.

Top pancakes with maple syrup and one of your other favorite toppings.
