How to cooked chicken and Broccoli Stir Fry at Home
INGREDIENTS FOR THE CHICKEN AND BROCCOLI STIR FRY:
1 pound boneless and skinless chicken breast, cut into 3/4 "pieces
2 tablespoons of cooking oil (I used extra light olive oil) divided
1 pound broccoli, cut into florets (about 5 cups)
1 small yellow onion, cut into strips
1/2 pound thickly sliced mushrooms
INGREDIENTS OF THE SAUTE SAUCE:
2/3 cup low-sodium chicken stock
3 tablespoons low-sodium soy sauce (use tamari for gluten-free)
2 tablespoons light brown sugar (or honey to taste)
1 tablespoon of cornstarch
1 tablespoon of sesame oil
1 teaspoon peeled and grated fresh ginger (lightly wrapped)
1 teaspoon of garlic (2 small cloves), grated
1/4 teaspoon black pepper and more to flavor the chicken
Me and my family's favorite chicken and broccoli dish.
This recipe couldn't be easier.
The sauce is amazing.
You will love it.
And that's a 30 minute dinner.
It meets in a pot.
For the sauce, mix two-thirds of a low-sodium cup
Chicken broth, three tablespoons low-sodium soy sauce,
two tablespoons of packaged light brown sugar,
a tablespoon of sesame oil,
and a tablespoon of cornstarch.
We use fresh ginger here
because it adds so much flavor.
And the easiest way to peel ginger
only use the edge of a spoon.
Peeled once,
You will grate lightly wrapped ginger in a teaspoon.
And don't add too much, or it will dominate the sauce.
Also add a teaspoon of freshly grated garlic.
And to top it all
add a quarter teaspoon of black pepper.
Whisk until the sugar dissolves.
Then put it aside.
You will need a pound of fresh broccoli crowns
or about five to six cups of sliced broccoli florets.
Next, cut half a pound of white mushrooms into thick slices.
Also cut a small yellow onion into thick slices.
And that may sound like a lot of onion, but don't worry.
It disappears into the sauce but adds great flavor.
Cut the onions into strips,
following the natural lines of the onion.
For our final preparation
You need a pound of boneless, skinless chicken breasts.
Cut into bite-sized pieces
about three-quarters of an inch thick.
And if you cut them into pieces of equal size
they cook more evenly.
Season the chicken lightly
with some black pepper.
You need a large, thick pan or wok,
and I use my cast iron pan here,
and I'll link this in the notes.
Put it on medium heat,
and add a tablespoon of cooking oil.
As soon as this pan is really hot,
add the chicken in a single layer,
and let it sit still for a minute
to get a good grip on the first page.
Then stir and continue frying
for another five minutes,
or until chicken is cooked through.
Once the chicken is golden brown and cooked through,
Transfer to a plate and set aside.
In the same pan over medium heat,
add a tablespoon of oil
and your sliced onions, sliced mushrooms,
and broccoli florets.
Keep cooking, stirring constantly
for another three minutes
or until your mushrooms and onions are tender.
Now reduce the heat to medium-low,
stir the sauce quickly
before you put it in the pan, in case there are deposits,
and put the whole sauce in the pan.
Let the sauce simmer for another three to four minutes,
stir frequently until the sauce thickens,
and garlic and ginger have a mild taste.
If you like the sauce a little thinner,
You can add a tablespoon of water at a time,
then bring it back to the boil.
Return the cooked chicken to the pan,
and stir for another 30 seconds,
or just until the chicken is heated through.
Try it at this point too,
and you can add more soy sauce if needed.
because it's incredibly sassy.
I love garnishing it with sesame seeds.
I toasted sesame seeds.
If yours aren't toasted, just grill them on a dry pan.
Okay, just a generous amount.
who puts a lot of butter in your rice,
or just a little butter or no butter?
Because I'm a butter person.
I like to start with the rice before I do that
Because it happens so quickly
It's good to have the rice ready when the stirring is done.
OK.
So let's go
And because it's so naughty
It covers some of the rice and it's just amazingly good.
And of course a little more sesame
because why not?
Really nice.
It gives the impression of leaving a restaurant.
OK let's go.
A little bit of everything.
Because in all of this everything is good.
I love chicken i love mushrooms
I love broccoli.
I like broccoli to be crispy and tender.
And if you like it a little sweeter,
you can let it simmer a little more.
But everything is cooked to perfection.
