This is a very healthy soup

1 medium garlic clove, finely minced

Two carrots

An onion

1/2 pound stew beef

a tablespoon of virgin olive oil

6 cups Rich Beef Stock or low-sodium canned beef broth

coarsely chopped fresh thyme

Parsley, for garnish

The method of preparation

In a 6-quart soup pot, heat 2 teaspoons of the olive oil over medium-high warmth. Add the meat and brown equitably, around 5 minutes. Utilizing an opened spoon, move the meat to a paper towel-lined plate.

Add the carrots and garlic and sweat 5 minutes, mixing sometimes. Add 1/2 cup of stock and scratch the lower part of the pot. Add the leftover stock, the meat, grain, and thyme and heat to the point of boiling.
